Gluten Free Sausage Gravy with “Biscuits” (Sweet Potato)

Hey there strong people!

Sausage gravy is not something I have often which is why I never realized how easy it is to make! I mostly nibble off of my husband’s plate when we go out to breakfast since this is his go-to. There are so few ingredients and it truly is a very easy recipe to make. Just a side note, traditionally sausage gravy is a little lighter in color but mine came our looking more like thanksgiving gravy LOL. I got lazy and didn’t fully degrease my cast iron skillet which made my gravy a darker brown color. STILL YUMMY!

Obviously there are no actual biscuits under the gravy BUT it tastes amazing with a warm sweet potato! I love white skin sweet potatoes best but any potato works! For traditional sausage gravy, the main ingredients are pork sausage, butter, flour and milk. In order to make this recipe gluten and dairy free I used Bob’s Red Mill 1 to 1 gluten-free all-purpose flour, ghee and lite coconut milk (did not taste coconut-y). Hope you enjoy this spin on Biscuits and Gravy!

No biscuits here BUT having the sausage gravy over sweet potatoes is so tasty! Plus, so many more nutrients in a sweet potato!
Top the pre-cooked sweet potato with gravy and garnish with chives.
This could be a great dinner or add some eggs to have a hearty breakfast!
Sausage gravy is just the best!

Notes

I used plain pork sausage and added my own spices but feel free to use already seasoned sausage or even a different ground meat. I cooked my sweet potatoes for 20 minutes in my instant pot or you can bake them at 400 degrees for 45 minutes depending on the size.
